Living on a ranch has is perks, beautiful scenery, no annoying neighbors (except the coyotes that howl all night long), lots and lots of stalls that need to be mucked out by your children when they are getting on your nerves. But driving time is not one of them.
By the time we get home from church on Sunday afternoon we are STARVING!! And a little cranky if truth be told. So having to come home and cook a large meal is not something that is the cards. So our Sunday dinners tend to either be something that is made have been prepped the night before, cutting down on the time it takes to get to the table, something that can be made in the crockpot or something that can be made very quickly. This is one of those quickie meals. That everyone will eat which is surprising with my house full of picky eaters.
So simple I have started giving my children the responsibility of getting this one done while mom and dad collapse on the cough until its done. (Notice I said, “give my children responsibility” instead of “telling my children to quit whining and get on with it”. Sounds much nicer.)
Start by frying 2 to 3 lbs. of hot or mild Italian sausage, depending on how much meat your family like to eat. Mine eats a lot so we do 3 lbs.
While you are cooking your sausage, bring a large pot of water to a boil. Once the water is boiling, add your tortellini, and let cook 5-6 minutes or until done. Drain the water and return the tortellini to the pot.
When the sausage is done (there should be no pink in the meat) drain the fat away, add to the tortellini pot once the tortellini is done cooking.
Add your favorite marinara sauce and serve.
