One thing that kids figure out really quickly is that I have a hard time saying no to them. Want to pet my cat that will make you sneeze for hours? Can I do your hair so you look like a psyc ward patient? Can I eat the brownie you have been hording for ever? It doesn’t matter what they want I will cave. They are just so darn cute!
This inability to say no to children is also the reason how we wound up we a freezer full of pork. For those of you who do not know, kids raise animals like pig, steers, goats, turkeys you name it and take them to the county fair to be sold for an unholy amount of money. And because the kids are adorable its really hard to say no when they ask you to buy their animals. Next year I am NOT going to the fair!! At least not to the animal section, the food section sure, but NO animals. I can’t afford that again!
The problem with buying a whole pig, besides the drain on my bank account, is that now I have 250 lbs. of pork in my freezer and really only know how to cook pork chops. So I have had to hunting for recipes on how to cook pork. Preferably fried in butter. One that I came across come from Kevin and Amanda and can be found here.
Like the name says, it really is a perfect pulled pork. A little time consuming but well worth the effort. The pork is moist and shreds beautifully and taste divine. The spices blend together to give it a wonderful taste that is not overwhelming and that makes a nice crust around the roast as well.
To say that my family liked it would be understating it. I had hoped to have enough left over to put in the freezer but it was gone by the end of the day. Next time I make this I will use two roast instead of one. Hopefully then I will get some leftovers out of it. And have only 220 lbs. of pork to try and figure out what to do with.
Just a word of caution, this really does take about 12-13 hours to make. So plan ahead like the recipe says!! Otherwise you make not eat until 8:00 at night. Not that I would know.
