Are you one of those people who at Christmas time have their neighbor and friend gifts ready to hand out at a moments notice? Really? Well confession time, I am not. I am usually scrambling last minute trying to get things ready for the big day that I always miss out on remembering to get something for my friends and neighbors. So to make up for that I hand something out for Valentines Day.
This year I decided to hand out some incredibly delicious and addicting Caramel Corn. Sweet, crunchy, chewy, and quite impossible to stop eating this recipe is one that my mom would make when I was little and its still delicious many years later.
I have added candy corn and sprinkles to help make it a bit more festive, they can be left out if you choose. But good luck on getting the sprinkles left out if you have a little girl helping. Next to glitter, sprinkles is her favorite color and nothing is going to get by without them.
I found some cute containers at the store to put the popcorn in and within a few hours had them all delivered. And just in time, I had eaten my weight in caramel corn and needed to stop.
Caramel Corn what you will need:
16 cups popped popcorn in a large bowl
Sheet pan with parchment paper
To make the caramel-
2 cups light brown sugar
1 cup butter
1/4 cup corn syrup
1/2 tsp. cream of tarter
1 1/2 tsp. vanilla
Combine all the ingredients in a 2 quart pan on med-low heat and bring to a boil. Once at a boil continue to stir for 7-9 minutes depending on how crunch you want your caramel to be. Remove from heat. (Be very careful while making the caramel, it can burn you if it splashes on you.)
After removing the caramel from heat, add 1 tsp. baking soda.
Carefully pour half the caramel over the popcorn and stir. Add remaining caramel and stir to cover popcorn. pour caramel corn on to cookie sheet and let cool before eating!!!
